We had the Best. Supper. Evar! last night.

  • Smoked pork loin
  • Potato pancakes
  • Pear salad

I used my stove top smoker, with cherry and oak woods. Sprinkled the loin pieces with salt and pepper, put a rosemary branch between them and drizzled them with garlic-infused olive oil.

There was still some mash left from lunch at the Irish Rover. Mash is lumpy mashed potatoes cooked with green onions (scallions, spring onions). I added salt, pepper, and a little flour and put scant 1/4 cups of the mix into melted butter and fried until browned on both sides.

This is weird, because I didn’t have any blue cheese or Gorgonzola or goat cheese. The dressing is weird because I totally made it up, but it was all good together:

MomGoth’s Weird Pear Salad and Weirder Dressing

  • fresh pears
  • walnuts (English, not Black Walnuts)
  • chunk of Parmesan cheese
  • mayonnaise
  • orange juice
  • pepper

Peel and core the pears and cut into large dice. Break up the walnuts–not ground, just chopped . Cut a slice of the Parmesan into small dice. Don’t grate it–the pieces should be just big enough that you can taste it when you bite it but not so large that it’s overwhelming. Thin the mayonnaise with enough orange juice to make it creamy/runny. Orange marmalade would work, too, but it would be different. Grate some pepper in and mix it all together and mix it in with the salad. Mmmmm!
